Bvlgari Wins Again In Black Box Team To Represent Indonesia In World Finals 2008-02-22 [Balibagus.com]
A mix of enthusiasm, experience and raw talent was enough to secure national victory for the Bulgari Resort Bali team in the MLA Black Box Challenge. The team will now represent Indonesia in the international finals to be held in Dubai in May.
Building on their 2006 victory against 12 teams from Bali, the Bulgari Resort faced off against strong opposition from the Shangri La Jakarta at the Hotel Nikko, Bali on January 26, tasked with producing three courses for 12 people using a supplied box of ingredients.
“It went very, very well for us“, said team captain Executive Chef Andrew Skinner. “It was a close contest and the judges were very candid about our performance and ways in which we could improve. That’s obviously something we will be looking at when we go to the finals later this year.
“I think as a team we performed very well. You have a vision at the start as to how the meal will turn out but transferring the plan from paper to plate is always difficult, especially under the pressure of competition.”
“Ican’t say it turned out exactly as we had hoped but in the end things went very smoothly and we are very pleased with the result. It was also nice to receive special recognition for the desserts, which is a compliment to the talents of our pastry chef.”
Team members Bayu Retno Timur, Diego Martinelli and pastry chef Dewa Agung Putu Karawista joined with captain Andrew Skinner in celebrating their win. They will be traveling to Dubai on May 10, 2008 to compete against 22 other countries for the world title in the prestigious MLA Black Box Challenge.
Andrew will be leading the team and is no stranger to victory in this culinary competition. He scooped the honours with the Amandari team in the inaugural event in Bali in 1996; won again in Mauritius in 2000 and led his team to victory in the Indonesian national finals in 2006.
Originally launched in Bali by Meat & Livestock Australia, the MLA Black Box Challenge is a unique culinary adventure in which teams of young chefs from around the world are given 24 hours to create an innovative menu from a ‘Black Box’ of mystery ingredients.
In this year’s finals the box contents included Australian beef chuck, fresh salmon, scallops, prawns and a selection of fresh fruits and vegetables. General cooking supplies, such as flour, butter, eggs, sugar and chocolate are also provided.
The Bulgari Resort Bali team created a menu beginning with a carrot, citrus and vincotto cacuicco with seared seafood, followed by a main course medley of beef in three varieties: served with home made pasta, shredded with a Balinese ‘bumbu’ spice mix and a slow braised chuck with baby vegetables.
The dessert selection, which received special mention from the judges, featured a hot baked chocolate moelleaux, or pudding; a vanilla, berry and fruit jelly and an almond financier with vanilla ice cream.
The judges included John Sloane, the Asian Continental Director of the World Association of Chefs; Jeff Matthews of Mandara Spa, along time Food and Beverage professional; Roland Lichardt of noted Ubud restaurant Lamak and the celebrated champion of Balinese food Heinz van Holzen. Alan Palmer represented the event sponsors MLA.
The Black Box Culinary Challenge was first held in Bali in 1996 and has grown to include competitions throughout the world, recently incorporating chefs from the Middle East, Africa, Europe and America.
