New Spa Cuisine At River Café ; Healthy Yet Delectable 2005-07-01 [Maya Ubud Resort & Spa]
Ubud, Bali – The River Café at Maya Ubud Resort & Spa introduced newly created dishes for its spa cuisine menu in mid June 2005.
“An option for maintaining your preferred lifestyle while vacationing, is light, healthy, modern and interesting dining on spa cuisine. “ said Maya Ubud Food & Beverage Manager, Otto King.
| The range of Maya spa cuisine allows guests to select from a “fit and health” menu to suit their dietary needs includes :
- Chilled tomato, basil and ginger gazpacho, grilled prawn on lemon grass, cal 124
- Java upland green asparagus with salmon dip and bali sea salt, cal 195
- Bali cured marlin and escarole tian on lentil antipasto, green cress salsa, cal 165
- Chilled tofu on seaweed and spring onions, fiery tomato and avocado potage, balsamic soya, cal 110
- Red rice crisped atlantic salmon, wasabi and green pea mash, miso orange dressing, cal 210
| “ We select low calorie and rich-vitamin food materials for our spa cuisine, like : tofu, green asparagus, salmon, scallop and seaweed. The fresh vegetables are taken from selected organic farms in Bali. We substitute some ingredients to a healthier style, such as unrefined sugars, fresh fruit nectars, and lots of high-fiber veggies, organic greens and Bali natural sea salt as well as extra virgin olive oil. ” said Otto.
| “ Even though the menu is slim and trim, creativity, selected ingredients and herbal seasoning uplift the culinary experience and surprise with texture and value in nutrition. ” added Chef Ketut Langgeng.
Located in the spa area of Maya Ubud Resort & Spa on the banks of the Petanu River, the covered-open air River Café provides other casual and light meals including pizzas, sandwiches and crusts and hot stone cooking in addition to the spa cuisine.
